Flist Help Needed - Japanese Writing Terminology

I'm working on a new Wonder(ful) Years story and have encountered a small roadblock. I need to know the proper way to refer to handwritten Japanese (Neal's translating notes made on a printed document).

Google and Wikipedia didn't help - there were references to hiragana and katakana as well as kanji and I'm still not sure when to use what term.

A ficlet will be written for the response with the most concise and comprehensive answer. Plus my undying thanks.
